Bikini Recipe

Yields 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, serving 10)

400ml premium vodka

Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Directions

For the Syrup: Put all the ingredients into a pot, bring to a light boil, stirring to dissolve. Then, turn off the stove allowing it to cool down entirely. Decant into an sterilised bottle, close it and refrigerate it in the fridge, where it will keep for about a month.

For the Batch Mix: Pour the specified spirits and syrup in a sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through cheesecloth, making it completely strained.

For serving: Add 85ml of your cocktail base into your mixing glass containing ice, gently stirring gently for one minute until cold. Strain into a chilled martini glass or a similar vessel, top with some cranberries adding the final touch using a brief mist of the essential oil over the drink.
